PRESS RELEASE: Marel and Three Streams Smokehouse introduce ground-breaking fish processing system
Today's discerning consumers expect the very best when it comes to pre-packaged fish, chicken and meat. As much as they expect freshness, convenience and perfect presentation, they also expect consistency in portion sizes. Similarly, in business, it is important to maximise premium grade products, to promote efficiency and to minimise waste.
It is with these very different needs in mind that two leading companies have partnered to introduce the most advanced fish processing system in South Africa.
Working closely with Three Streams Smokehouse, the country's top producer of salmon, trout and seafood products, Marel, a leading global provider of advanced equipment and systems in the food processing industry, has designed a customised and integrated system that is set to change the way in which the fish processing industry works.
The system includes Marel's new I-Cut 10 Portion Cutter, which is engineered to cut portions to an exceptionally high level of accuracy, significantly increasing efficiency and reducing the cost of production. Marel's industry leading scales are also connected to the Innova production control software at the plant, which assists Three Streams in providing real-time monitoring and control of critical key performance indicators relating to their production.
Head of Marel's Fishing Industry Section, Ivan Proctor, explains: "There is inevitably a fairly high level of wastage when cutting fixed-weight portions by hand, which usually involves trimming off excess to guarantee the right weight. The new I-Cut 10, however, scans fish fillets, takes their density into account, and cuts fixed-weight portions with very little wastage - and all at a much faster rate than would be possible using manual methods."
CEO of Three Streams Group, Gregory Stubbs concurs: "With demanding clients like Woolworths, every single portion we produce needs to be of standard weight, and needs to be presented perfectly. Marel's system, which we've been introducing in a phased way, has enabled us to reduce wastage and improve efficiency during the cleaning and filleting process. Now, with the introduction of the I-Cut 10, we also have the ability to cut fixed-weight and fixed-length portions at high speed. This adds yet another level of efficiency to our process."
Simple to use, the new I-Cut 10 requires only a few touches to the functionally designed control panel in order to cut portions accurately and efficiently. Its speed and versatility saves on labour costs, while improvements in yield rapidly secure a return on investment. The design of the machine also makes it very easy to clean, and its small footprint means it fits into almost any plant layout.
"At Three Streams, we believe in controlling the quality of our product from hatchery to plate," says Stubbs, a veteran of the aquaculture and fish processing industry. "As a result, our processing systems are fundamental to the product value we deliver."
"That's why we chose Marel to design and implement an integrated processing solution for us. When you want to deliver the best product, you have to use the best machinery on offer."
